Molten Chocolate Baby Cakes

12 oz semisweet chocolate finely chopped

3 tbsp unsalted butter at room temperature

2/3 cup granulated sugar

1/8 tsp salt

1/2 cup cake flour

1 tsp vanilla

4 whole eggs @ room temperature

 

Preheat oven to 400 F and place rack in middle of oven
Grease and line 6, six ounce ramekins and line bottom with parchment paper
Melt chocolate in a double boiler, remove from heat and let cool slightly

In a bowl combine the butter, sugar, salt and eggs and beat with a mixer until well blended.
Add flour and blend well. Add vanilla and chocolate and blend until smooth. Pour the mixture evenly into the ramekins.
Bake on a cookie sheet until tops are puffed, about 15 to 17 minutes
Remove from oven and cool 4 to 5 minutes.

Run a thin knife around the edge of the ramekin and invert onto the serving plate. Peel off parchment paper. Decorate the plate with a raspberry puree and dust with icing sugar
